OH MY, I made these amazing little pieces of heaven a few weeks ago.. Such a delightful healthy recipe hack from the original sugar filled store bought and homemade versions and even more delicious.

CHOCOLATE "NUT BUTTER" WHOOPIE PIES
Serves 10 -12
INGREDIENTS
For the Whoopie Pies
¼ cup coconut flour
¼ cup 100% cacao powder
¼ teaspoon pink himilayan salt
¼ teaspoon baking soda
3 large eggs
¼ cup coconut oil
¼ cup maple syrup
⅛ teaspoon stevia extract
For the Frosting:
½ cup almond butter
½ cup butter or ghee
¼ cup honey
⅛ teaspoon stevia extract
⅛ teaspoon pink himilayan salt
For topping:
1 bar 70% melted dark chocolate.
INSTRUCTIONS
Pulse together dry ingredients in a food processor
Pulse in wet ingredients until smooth
Scoop batter onto parchment paper lined baking sheet, using a 1 tablespoon scoop
Make sure to scrape all of the batter out of the food processor in order to get proper yield
Bake at 350° 7-9 minutes
Cool for 1 hour
Meanwhile - In a food processor combine or almond butter and shortening
Pulse in honey, stevia, and salt until fluffy.
Once cooled for 1 hour fill pies with frosting and drizzle with 70% melted dark chocolate.
